It was the Olivetan monks, on the island from 1482 until 1624, who dedicated themselves to planting olive trees and producing oil. Even today, 6,000 olive trees are chiseled like works of art in the Polvese landscape over an area of 75 hectares. “Legend” has it that in the silence of the November nights for the olive harvest, the squeaking of the millstone would be heard turning with the monastery coming back to life.

The oil mill

With us you can still see all the moments, almost like a sacred rite, of olive harvesting and oil production. Modernity harmonizes with the hands that still caress the plants, and using both ancient millstones and modern equipment, bring the colors of the oil to life.

The olive grove

Walking around the island you will walk along avenues along which expanses of olive trees, with their wide branches, will crown you. A unique landscape, with many olive trees that are still the legacy of those monks who wanted to leave us these signs of beauty of beauty, authentic taste and values.

Our oils

With the ancient tradition of Olivetan monks still olive trees are cultivated and “dolce lago” oil is produced. Its fragrance, enveloping and with delicate taste, matches without ever mimicking the tastes of the lake tradition.
